Yummy fall time recipe : Apple pie with oats

Hello friends! 

Ok so just because it's not even fall yet here in Cyprus that doesn't mean that I cannot be in "fall mood". I decided to make my very own apple pie today, but just so it wouldn't be just a basic apple pie I added some oats as well! This was really easy to make (except for me the part where you have to peel the apples, because I usually don't peel them) and it tastes amazing!

Ingredients

100 g of  soft butter
1 egg
1½ dl of oats 
½ dl of sugar 
1½ dl of flour 
1 tsp of baking powder
--
2-3 apples

For the oat topping: 

50 g of butter
½ dl of sugar
1 tsp of  vanllinsugar 
1½ dl of oats 

Note: For the oats I just used normal Quakers! :) So basically you can use any oats you want.

1. Preheat the oven 200 degrees Celsius 
2. Mix the butter, egg, oats, sugar, flour and baking powder together. 
3. Press the dough into a round pie dish using a little bit of flour ( if the dough feels sticky, flour will help to make it less stickier and easier to use)


4. Peel your apples and cut them into pieces. Add them on top of the dough (try to put them as flat as you can). 


5. And now the oat topping. Melt the butter in a pan. Take it off the heat and add sugar ad oats.
6. Sprinkle the mixture evenly on top of the pie


7.Put the pie into an oven and bake it approximately for 25 minutes. 


Enjoy the pie with custard sauce or vanilla ice cream (unfortunately I didn't have neither)

A year later

Hi guys! :) 

Ok so today it has been exactly one year since I left my job, packed my bags, left Finland and moved to Cyprus. And I have to say, I was afraid at first. I was afraid that nothing goes as I had planned and I have to move back. But now, things are great. I mean they are really great. I am studying to be an accountant, I am working in a great place and I have really nice apartment and boyfriend who I can always count on. 


This year has thought me a lot. A lot about myself, a lot about Cyprus and the way things roll in here. And I'm not quite sure if I like the way things are done here but at least I can say I'm happy. Of course I miss home, I miss my family and my friends but I would not wanna go back to Finland. Nah. But I'm not sure either if I'm going to spend the rest of my life here in Cyprus either. We will see. I'm still young, but at first I would like to finish my studies here and then see where the world takes me. 


Before I moved they said it will be hard. Hard to find job, hard to be on your on so far away from everything I am used to. But hey. I have proved everyone who have ever doubt me wrong. It took me less than 2 months to get my first job in here. It took me 4 months to find a good apartment. And it didn't take so long when I decided I wanted to change a job to get another one (which was one of the greatest decision I have made so far because I really enjoy my new job). Everything is possible if you just really want to. And yes I admit things wouldn't be this good if I hadn't have all the help from great people I have in my life but still, I have fought to be in a position that I am right now. And I really love my life. 


So my advise; believe in yourself. Believe that you can make it and you will. Dream. Because believing in your dreams will get you far if you are just ready to fight for them!

How to "lighten up" your bedroom

Heyyy friends!

Ok so I know that in most countries summer is almost (or already) over but here in Cyprus it's still really hot outside and there's no sing of autumn! And because I've been trying to survive my really hot summer nights I was all on board when Parachute asked me to share some of my tips on how to make your hot nights easier! I hope you enjoy! :)

The first thing I do before I go to bed is to open my air condition. And because I have three little cats living with me, so opening up my windows is not a question (did that once, woke up and my cats were sitting outside my window, luckily they didn't fell down!). I usually just open it for 30 minutes before I sleep just so that my room feels cooler.

It's also very important to have light sheets because it will make you feel more cooler than with winter sheets. Also I got rid of my duvet so I am just sleeping with cover sheet. ( You can also put your sheets in the freezer for a little while before you go to bed but just don't forget them :p) Parachute has some really nice sheets for summer time (and for the autumn time as well for you guys who live in colder countries).

I also tend to have my shutters closed so that the sun wont get in and make my room even hotter. Lightning up a fresh candle makes your air feel fresh too and it's always nicer to go to sleep with fresh air! Also I do have a glass of water or bottle next to me just in case I feel thirsty (also water makes you feel cooler ! )
